Chocolate Chia Mousse

During our recent retreat in the tranquil paradise of Ubud, Bali, we had the pleasure of creating a delightful dessert that perfectly embodies the essence of this beautiful island. At The Shala Bali, we crafted a refined sugar-free chocolate mousse that is both indulgent and nourishing. With the rich taste of cacao and the creamy goodness of coconut, this recipe showcases the natural sweetness of coconut sugar and the health benefits of chia seeds. It’s a delicious treat that you can enjoy guilt-free!

Chocolate Chia Mousse using coconut cream:

Ingredients:

Instructions:

  1. Combine Ingredients: In a large bowl, whisk together the coconut cream, cocao powder, coconut sugar,  and salt until well combined.

  2. Add Chia Seeds: Stir in the chia seeds, ensuring they are evenly distributed throughout the mixture.

  3. Let It Sit: Allow the mixture to sit for about 10 minutes. This lets the chia seeds absorb some of the liquid and begin to swell.

  4. Whisk Again: After 10 minutes, whisk the mixture again to break up any clumps of chia seeds.

  5. Refrigerate: Cover the bowl with plastic wrap or a lid and refrigerate for at least 2-4 hours, or preferably overnight. The mousse will thicken as it chills.

  6. Serve: Once set, give the mousse a good stir, then serve in individual bowls or glasses. You can top it with fresh fruit, fresh mint, or a dollop of whipped cream for extra flavor.
