Vegetable Kitchari Bowl

 

A bowl of Kitchari is the ultimate comfort food. Load it up with your favourite vegetables. Enjoy it for breakfast, lunch or dinner. All you need to make this wholesome meal is Organic Turmeric Kitchari mix, 2 cups of vegetables and water.

  1. Heat 1 tablespoon of ghee or coconut oil in a medium sized saucepan. Add rice mix, stirring until fragrant, approximately 2 minutes
  2. Add 2 cups of small chopped vegetables - our favourite is onion, peas, carrot & zuchini.
  3. Add 4 cups of boiling water. 
  4. Once bubbling, reduce to a low-medium heat for 20 minutes, stirring occasionally. Remove from heat and let sit for 10mins before serving.

Served here with fresh tomato salad, yoghurt, lime and fresh herbs.

Or try these recipe variations

Add 1 tablespoon of bone broth glue or chicken stock with the water at step 3

Increase small chopped vegetables to 4 cups for a fuller meal 

Reduce water to 3 cups for a dryer rice dish 


Serve this delicious dahl with 

Chopped herbs, lime wedge & yoghurt on top

Sauteed Mushrooms, saurkraut & yoghurt on top 

As a side with dahl or curry

Pan fried chicken pieces & baby spinach
