Summer Salsa

This salsa is one of our favourite summer side dishes! It adds a touch of sweetness, spice and colour to any meal, and if you create a large batch you'll find yourself using it everywhere.

Serve it with corn chips, alongside fish, or use it to cool down a spicy curry. You can even add it to your sandwiches for a gourmet lunch!

Ingredients

  • 1 cups semi ripe mango cut into tiny cubes 
  • 1/4 red onion cup finely chopped onion 
  • 1/4 cup finely chopped capsicum 
  • Small handful of chopped coriander leaves 
  • Small handful of chopped mint leaves 
  • 1/4 cup finely chopped capsicum 
  • 1/2 tablespoon lemon juice 
  • 1 green or red chilli finely chopped 
  • 1 clove garlic finely chopped 
  • 1 tablespoon Love My Earth Vindaloo Curry Powder
  • 2 tablespoon olive oil
  • Salt to taste

Instructions

Mix the mango, onion, chilli, garlic, salt, lemon juice, mint and coriander leaves together in a bowl (you can chop these ingredients in a food processor, aside from the mango). Set aside. 

Heat the oil in a pan and fry the Vindaloo Curry Mix for a few minutes until fragrant.
Let this mixture cool and then pour over and the mango salad to infuse the flavours, and serve with all your favourite summer dishes!
