Hearty Bombay Tomato Dahl

 

A hearty red lentil dahl with warming spices. All you need to make this easy recipe is organic Bombay Tomato Dahl Mix, 2 Cups of mixed vegetables, tin of tomatoes & water .

Quick & easy meal for those who prefer a little spice. 

Heat 1 tablespoon of ghee or coconut oil in a medium sized saucepan. Add Bombay tomato dahl mix, stirring until fragrant, approximately 2 minutes

  1. Add 2 cups of mixed chopped vegetables - our favourite is zucchini, red onion & capsicum. 
  2. Add 1 400g tin of chopped tomatoes & 3 cups of boiling water. 
  3. Once bubbling, reduce to a low-medium heat for 30 minutes, stirring occasionally. 

Served here with Roti breads, chop salad, Yoghurt and Chutney.

 

Or try these recipe variations

Add 2 tablespoons of cream or yoghurt  at the end for a creamy finish.

Add browned lamb shanks at step 2 & cook in a slow cooker.

Add olive oil Eggplant & fresh parsley for a mediterranean flavour

Serve this delicious dahl with 

Basmati rice,  yoghurt & herbs 

As a side with another curry or protein

Mash potato or Cauliflower rice 

Serve with Pasta or Zucchini noodles
