Transform your pack of Organic Bombay tomato dahl into a delightful lamb minestrone soup that’s perfect for the whole family! Packed with tender lamb, vibrant vegetables, and rich flavors, this recipe delivers warmth and nourishment, with plenty left over for later.

Ingredients:

  • 1 tablespoon ghee or coconut oil
  • 500g lamb pieces with bone or lamb rump pieces
  • 3 cups assorted chopped vegetables (such as carrots, onion, zucchini, cauliflower, and broccoli)
  • 1 pack Organic Bombay tomato dahl mix
  • 1000ml (4 cups) boiling water
  • 1 jar of tomato passata
  • 500ml additional water (optional for desired consistency)
  • 1 cup small pasta

Instructions:

  1. Sear the Lamb: In a large soup pot, heat the ghee or coconut oil over medium heat. Add the lamb pieces and sear until browned on all sides.

  2. Add Vegetables: Stir in the chopped vegetables, allowing them to soften for a few minutes.

  3. Incorporate Dahl: Mix in the Bombay tomato dahl and cook until fragrant, about 2 minutes.

  4. Combine Liquids: Pour in the boiling water and the jar of tomato passata. If you prefer a soupier consistency, add the additional 500ml of water at this stage.

  5. Simmer: Reduce the heat to low and let the soup simmer for up to 1 hour, stirring occasionally, until the lamb is tender and flavorful.

  6. Cook Pasta: Finally, add the small pasta and cook for an additional 7 minutes, or until al dente.
