Ingredients for Quick Mild Chickpea Curry:
- 1 Quick Stix Mild Indian Curry recipe base
- 2-3 tablespoons of ghee or coconut oil
- Cooked and drained chickpeas
- 1 cup Frozen spinach (can also use fresh then double the amount)
- 1/2 medium Cauliflower - chopped
- 1/2 red onion - diced
- 1 cup of water
- 1 tin of coconut cream
- 6-7 cherry tomatoes halved
- Optional: Salt to taste
Cooking Instructions:
- Heat: In a large saucepan, heat 2-3 tablespoons of ghee or coconut oil over medium heat.
- Sauté the onion
- Add the veggies: Add all the rest of the veggies
- Add Seasoning: Stir in the Quick Stix Mild Indian Curry recipe base, coating the veggies and cooking until fragrant.
- Mix in Liquids: Add 1 cup of water and 1 tin of coconut cream. Stir thoroughly to combine.
- Simmer: Once bubbling, reduce to low-medium heat. Simmer for 20 minutes, stirring as needed. Add the cherry tomatoes five minutes before the dish is ready.
