Ingredients:
- 1.5 kg free range/organic whole butterflied Chicken
- 1 cup coconut Greek yoghurt
- 1 sachet Organic Butter Chicken Quick Stix Mix
- Juice of 1 lemon
- 3 tbsp fresh parsley, finely chopped
- 1 lime, cut into wedges
For the bone broth rice & veggies:
- 1 pack Organic Bone Broth Rice – Chicken
- 3 cups frozen vegetables (corn and peas)
Cooking Instructions:
- Mix: the yoghurt and Organic Butter Chicken Quick Stix Mix in a bowl until smooth and well combined.
- Add: lemon juice and stir through.
- Prepare: the chicken by scoring it lightly to help the marinade penetrate deeply.
- Coat: the chicken thoroughly on both sides with the marinade.
- Marinate:cover and refrigerate for at least 1 hour, or overnight for best flavour.
- Bake: the chicken at 200°C for 50 minutes, or until cooked through and juices run clear.
- Cook: the bone broth rice according to packet instructions, adding frozen vegetables during the final few minutes of cooking.

Serve: the chicken over the rice, sprinkle with fresh parsley, and finish with lime wedges.
