Red Chicken Curry Mild

Add some spice to your dish without the spiciness. Our Mild Organic Curry Powder has the perfect blend of aromatic certified organic powders of turmeric, coriander, fennel, cumin, cinnamon, ginger, black pepper and nutmeg. 

The Red Chicken Curry is an easy one pot dinner packed with flavour and suitable for the whole family. Served with basmati rice, fresh coriander and homemade satay sauce.


Ingredients:

2 tbsp coconut oil

2 tbsp Organic Curry Powder Mild

320g chicken tights fillets, skin off, diced

200g green beans, cut in half

400g passata

1 cup of carrots and red capsicum chopped

1 cup Organic Basmati rice

Homemade Satay sauce ( the recipe is on the blog)

Fresh coriander

Celtic salt (to taste)

Water (if needed)

 

Preparation:

  1. Put the rice to cook using you preferred cooking method. There is a blog on how to cook The Perfect Basmati rice
  2. Fry 2 tbsp of olive/coconut oil of spice until fragrant
  3. Add the chicken, salt and the diced onion and stir well with the spices. Cook for 5 minutes
  4. Add the veggies
  5. Add the passata
  6. Place a lid on your pot and simmer for about 30 minutes or until the chicken is fully cooked
  7. Serve with basmati rice, fresh coriander and the satay sauce



Tips:

Swap the tomato passata for coconut cream/milk for a creamier curry

Add roasted peanuts for an extra crunch 

Add more chicken and more veggies to make a bigger portion
