One Pot Chicken Kitchari
Chicken Kitchari is a comforting and nourishing dish that combines the traditional Indian concept of kitchari—often a blend of rice and lentils—with organic tender chicken thighs for added protein. This one-pot meal is seasoned with organic aromatic spices like fenugreek, turmeric, and ginger, creating a warming and comforting one pot dish.
This makes enough for 4 people or 4 lunches. Top it with fresh herbs and yoghurt
Ingredients
2 tablespoons of coconut oil or ghee
500g of chopped chicken thighs
1 Love My Earth Turmeric Kitchari rice mix
2 cups of mixed chopped veggies
1L of Boiling Water
Preparation
- Heat 1 tablespoon of ghee or coconut oil in a medium sized saucepan. Add 500g of chopped chicken thigh pieces
- Add Turmeric Kitchari mix, stirring, until fragrant, approx. 2 minutes.
- Add 1L (4 cups) boiling water, stir to combine and bring to a bubbling boil.
- Recommended – add 2 cups of mixed chopped vegetables. I used peas, carrots and potatoes.
- Turn heat to low and cook kitchari, stirring occasionally, for 30 minutes. Serve Hot with a drizzle of yoghurt and fresh herbs.
