Italian Inspired Kitchari

An Italian-inspired twist on traditional Kitchari brings a delightful fusion of flavors. This comforting dish features Organic Turmeric Kitchari mix as its base, enriched with the savoury taste of sautéed mushrooms and cherry tomatoes. Add in hearty diced ham for a satisfying depth, or opt for roasted red peppers for a vegetarian twist. Fresh spinach adds a touch of green goodness, while a generous topping of aromatic basil pesto brings it all together. Perfect for any meal of the day, this version offers a unique blend of Italian inspirations in a wholesome, invigorating bowl.

  1. Heat 1 tablespoon of olive in a medium sized saucepan or rice cooker. Add rice mix, stirring until fragrant, approximately 2 minutes
  2. Add 2 cups of small chopped vegetables - we used mushroom, cherry tomatoes and some chopped ham pieces.
  3. Add 4 cups of water (3 cups of boiling water if you like a dryer kitchari)
  4. Once bubbling, reduce to a low-medium heat for 20 minutes, stirring occasionally.Or just let the rice cooker do its thing.
  5.  Remove from heat and let sit for 10mins before serving.

You could also stir in a tablespoon of bone broth for added flavour and protein. 

Served here with fresh baby spinach and drizzle with pesto.
