Easter is the perfect time for indulgence, but who says that indulgence can’t also be healthy? Our Dark Chocolate Peanut Butter Easter Vegan Eggs are a guilt-free, gluten-free, and dairy-free treat, and they’re perfect for all occasions. Whether you’re celebrating Easter or simply craving a sweet snack, these easy-to-make, delicious chocolate peanut butter eggs are both kid-friendly and adult-approved. Best of all, they are made with wholesome and organic ingredients that nourish the body, inspired by Ayurveda’s approach to balance and well-being.
Ingredients:
1 tbsp Organic cacao nibs (optional)
1 tbsp Organic cacao powder
1 cup of peanut butter, oils well stirred
Pinch of Celtic salt
2 tbsp maple syrup (adjust for sweetness)
1/2 cup Organic coconut flour
1/2 cup Organic roasted peanuts
40g Organic Dark chocolate chips
Preparations:
- Combine all the ingredients apart from the dark chocolate chips in a bowl, mix well until the mixture sticks together when firmly pressed. If it is too dry add a spoon or two melted coconut oil, or another couple of spoons peanut butter.
- Scoop the mixture in the moulds and press firmly to be able to get the egg shape. Place in the freezer for 10-15min to firm up.
- In the meantime melts the chocolate and let it cool down for a few minutes. Pour about 1-2 spoons of melted chocolate in each mould (depending on size) or until the chocolate has fully covered the mould. Repeat for the rest of the eggs then place the eggs back in the mould with the chocolate and press firmly. Drizzle any left over chocolate or enjoy it yourself.
- Place in the freezer for about 10 minutes or until the chocolate is firm. Serve and enjoy straight away.
Tips:
Peanut butter can be swapped with any nut butter of your choice
If you don’t have an Easter egg mold, simply roll the mixture into small balls and dip them in the melted chocolate for a quick and easy treat. These are perfect for snacking!
Adjust the size of the egg molds depending on how large or small you want the treats to be. You can make mini eggs for a more bite-sized treat or larger eggs for a more indulgent experience.
Keep in the fridge or freezer in an airtight container.
