This quick and easy coriander sauce can be used as a great dressing, dip, side, and is the perfect addition for any curry dish or banquet. It is also delicious drizzled over roast meat and pairs especially well with our Baked Tandoori Cauliflower.
- 1 big bunch of coriander
- 4 garlic cloves
- 1 tomato
- Salt and pepper
- ¼ cup of olive oil
- Juice of 1 lime or lemon
Wash the coriander root thoroughly and trim any dirty parts off.
- Roughly chop the coriander and set aside.
- Peel the garlic.
- Add everything into a blender - the coriander, garlic, tomato, salt, pepper, olive oil and lime or lemon juice.
- Blend until there is a smooth consistency.
- Enjoy as a side to a dish or as a delicious dip
This sauce can be stored in a jar for up to 5 days.
