Quick and delicious gluten free treat made with four simple ingredients, no cooking required! If you have a few smoothie bananas at hand, they will be perfect for this recipe as they are ripe and extra sweet.
Ingredients:
3 ripe smoothie bananas
3/4 cup plain unsweetened Greek coconut yogurt
3 tbsp Love My Earth Organic Milk Choc drops
2 tbsp Love My Earth Desiccated Coconut/Organic Shredded Coconut
Preparation:
- On a cutting board place a sheet of baking paper. A baking tray can be used instead of the cutting board. Cut the bananas in similar size circles, not too thick and place next to each other on top of the baking paper. Place another sheet on top and using a glass press gently the bananas, do not squash them. Remove the top sheet of asking paper when finished pressing the banana pieces
- Using a spoon spread the yogurt on top, make sure all bananas are covered. Add more yogurt if needed
- Melt the chocolate using a double boiler method and using a spoon drizzle on top of the yogurt
- Sprinkle the coconut
- Place the bark with the cutting board in the freezer. Make sure it is places flat so that the yogurt doesn’t spill before it freezes.
- Freeze for 3 hours or until firm
- Cut in pieces and enjoy. Make sure you remove any baking paper prior to consumption
- Store in an airtight container or resealable freezer bag in the freezer for up to 3 months.
Tips:
Can be made dairy-free if you swap the milk chocolate drops for dark chocolate.
Opt for yogurt which is not too runny, Greek yogurt works really well. Both diary and diary free work well.
Place at room temperature for about 3-5 minutes prior to consumption. It needs to soften up slightly before before serving, otherwise might be hard to bite in
