Easy Organic Lamb Leg Roast Recipe – No Garlic Crushing, No Herb Chopping, Simple & Delicious

This juicy lamb leg roast is incredibly easy to prepare thanks to QuickStix Organic Savoury Mince, which replaces the need for garlic or herb chopping. Simply marinate the lamb with lemon juice, olive oil, and the seasoning sachet. Place it over a bed of chopped carrots and onion, add water, and roast at 165°C. After cooking, rest the lamb, then use the vegetables and juices to create a rich, flavorful gravy with cassava flour. Serve with an extra squeeze of lemon for a fresh finish.

Cooking Instructions:

  1. Room temperature: Take the lamb leg out of the fridge 1 hour before cooking to bring it to room temperature. This helps it cook evenly and stay juicy.
  2. Pre-heat: Set your oven to 180°C (fan-forced or standard).
  3. Marinate: In a small bowl empty the Organic Savoury Mince sachet. Add the lemon juice and the olive oil. Mix well to create a thick, smooth paste.
  4. Cut: Using a sharp knife, make a few deep incisions on both sides of the lamb leg to help absorb the marinade.
  5. Veggie base : Roughly chop the red onion and carrots into chunks. Scatter them at the base of your baking dish – this will form the foundation for a flavorful gravy later.
  6. Spread & assemble: Generously coat the lamb with the herby, spiced marinade, covering all sides. Place it on top of the veggies.
  7. Water: Add a bowl of water
  8. Rest: Remove from the oven and let the lamb rest for 15 minutes, loosely covered with baking. This locks in the juices.Remove from the oven and let it rest for 15 minutes before plating
  9. Gravy: Place the pot back on the hob on low, add the flour and using a whisk mash the carrot and the onion. Add a cup of water for a thick gravy or more for a runny one. Simmer for 5-7 minutes or until you have the desired consistency.
