Ingredients for Slow Cooker Thai-Inspired Curry:

  • 1 Quick Stix Mild Indian Curry recipe base (organic seasoning)
  • 1.5 kg of grass-fed or organic osso buco (or your preferred organic meat)
  • 1 quartered onion
  • 2 kaffir lime leaves
  • 1 smashed stick of lemongrass
  • Grated fresh ginger (about 2 tablespoons)
  • 3-4 large potatoes or sweet potatoes, cut into quarters
  • 2-3 tablespoons of ghee or coconut oil
  • 2 cups of water
  • 1 tin of coconut cream
  • Optional: Salt to taste

Cooking Instructions:

  1. Brown the Meat: In a skillet, heat 2-3 tablespoons of ghee or coconut oil over medium-high heat. Add the osso buco and brown on all sides, then transfer to the slow cooker.

  2. Add Aromatics & Herbs: Place the quartered onion, kaffir lime leaves, smashed lemongrass, grated ginger, into the slow cooker with the meat.

  3. Incorporate the Organic Seasoning: Stir in the Quick Stix Mild Indian Curry organic seasoning, coating the meat and aromatics evenly.

  4. Add Liquids: Pour in 2 cups of water and 1 tin of coconut cream. Stir well.

  5. Cook: Cover and cook on high for approximately 3 hours.

  6. Add Potatoes: During the last hour of cooking, add the quartered potatoes or sweet potatoes. Stir and continue cooking until the potatoes are tender.

  7. Thicken the Sauce (Optional): If you want a thicker sauce, remove the lid during the final 15-20 minutes of cooking or transfer everything to a saucepan and simmer uncovered until desired thickness.
