Simple Mushroom & Veggie Curry

Looking for a quick, comforting dinner that’s full of flavour? This simple mushroom and veggies curry is the perfect one-pot recipe, ready in just 25 minutes. Made with our Organic Mild Indian Curry Quick Stix Mix, it’s packed with nourishing ingredients like mushrooms, green beans, peas, and creamy coconut—ideal for a wholesome weeknight meal. Served with organic basmati rice. 

Ingredients for Quick Stix  Simple Mushroom & Veggie Curry:

  • Mild Indian Curry Quick Stix Mix 45g
  • 1 cup of diced red onion
  • 2 tbsp coconut oil, ghee or olive oil
  • 500g mushrooms - washed and chopped
  • 500g frozen green beans and peas
  • 1 cup of water 
  • 1 tin coconut cream 
  • Chopped coriander 
  • Cherry tomatoes - halved (optional)
  • 1 tbsp Organic Nigella Seeds (optional)
  • Salt to taste 


Cooking Instructions:

  1. Sauté : Melt the coconut oil and add the onions,saute 
  2. Combine: Add the mushrooms and brown on medium heat.
  3. Add seasoning: Add the seasoning sashet and coat the mushrooms, stirring though until fragrant 
  4. Add veggies: Add the frozen veggies and stir
  5. Add liquid: Add the water and coconut cream, stir thoroughly 
  6. Simmer: Once bubbling, reduce heat to simmer for 20 minutes, stirring as needed, until thickened slightly

Serving Suggestion:

Stir in the cherry tomatoes, sprinkle the chopped coriander and the Organic Nigella Seeds. Serve your mushroom curry in a bowl with Organic Basmati rice.
