Quick Stix Marry Me Chicken

Ingredients for Quick Stix Bolognese Marry Me Chicken:

  • 1 sashet Quick Stix Bolognese organic recipe base
  • 2-3 tablespoons of ghee or coconut oil
  • 500g chicken - skinless and boneless 
  • 500g frozen veg (used a mix or spinach, corn, peas, carrots and green beans) 
  • 1 cup dried tomato chopped 
  • 6 tbsp of Organic Cassava flour 
  • 1 cup double cream
  • 200ml of chicken stock
  • 1/2 cup Parmesan cheese 
  • A handful of Fresh basil leaves

Cooking Instructions:

  1. Coat: mix the flour with 1 tbsp Quick Stix Bolognese organic recipe base and coat the chicken in it
  2. Fry: In a large, deep pan heat the ghee/oil over a medium heat. Ones heated ad the coated chicken breasts. Cook for 5 minutes on each side. Set aside
  3. Cook: Turn the heat to low, add more ghee if needed and sauté the onion
  4. Add the veggies: Add the frozen veggies and the dry tomatoes
  5. Mix in Liquids: Add the chicken stock and the cream. Stir thoroughly to combine.
  6. Add the spices: Add the rest of the Quick Stix Bolognese mix, stir well and add the Parmesan 
  7. Add the chicken: Put the lid on and cook for another 15 minutes on low or until the chicken is fully cooked.
  8. Add the fresh basil: Cook for another five minutes and take off the heat. over the fresh basilOnce bubbling, reduce to low-medium heat. Simmer for 20 minutes. 

Serving Suggestion:

Serve your Quick Stix Marry Me Chicken with mashed potatoes or organic basmati rice, fresh cucumber and a sprinkle of fresh herbs  and black sesame seeds for the perfect meal.
