Ingredients for Chicken Bone Broth Rice:

1 tbsp extra virgin olive oil

1 cup organic beans

1 cup frozen corn

1 cup red capsicum (sliced)

1 cup cherry tomatoes (halved)

1 cup roasted chicken
- 2 cups of water
- Fresh coriander leaves
- spicy salsa (optional)
Cooking Instructions:
- Heat: the oil, add the rice mix and two cups of water
- Add: corn, bring to boil, then simmer with lid on for 12 minutes
- Stir: in the beans, capsicum, tomatoes and chicken
- Stir: stir in the veggies and the chicken while it is on the hob on low for two minutes
- Serve: warm
