Mexican Bone Broth Rice Bowl

Ingredients for Chicken Bone Broth Rice:

  •  1 tbsp extra virgin olive oil
  •  1 cup organic beans
  •  1 cup frozen corn
  •  1 cup red capsicum (sliced)
  •  1 cup cherry tomatoes (halved)
  •  1 cup roasted chicken
  •  2 cups of water
  •  Fresh coriander leaves 
  •  spicy salsa (optional)

Cooking Instructions:

  1. Heat: the oil, add the rice mix and two cups of water
  2. Add: corn, bring to boil, then simmer with lid on for 12 minutes
  3. Stir: in the beans, capsicum, tomatoes and chicken
  4. Stir: stir in the veggies and the chicken while it is on the hob on low for two minutes
  5. Serve: warm

Serving Suggestion:

Serve with lettuce, avocado, cucumber, olives & spicy Mexican sauce of your choice
