Ingredients for Quick Stix Delicious Taco Lentils:

620g cooked Taco Lentils - recipe here
- 2 bowls of corn chips
- 1 cup grated cheese
- 1 cup corn
- 3/4 cup red capsicum (chopped in smaller cubes)
- 2/3 red onion
- 1 tomato - finely chopped
- 1/2 cucumber - finely chopped
- a handful of fresh coriander
- 1 tbsp lemon juice
- 1 avo, mashed with a pinch of fine celtic salt and 1/2 lime juice
- 5 tbsp sour cream
Cooking Instructions:
- Pre-heat : the oven to 180 C and on a baking tray spread the Navajo chips on a tray living no gaps
- Spread: The taco mix over the corn chips - evenly
- Veggies : Add the finely capsicum, inion and corn.
- Cheese: Sprinkle cheese generously over the top
- Bake: For 20 minutes or until the corn chips ages start to golden.
- Mix: In a small bow, mix the tomato, cucumber, coriander and line juice
- Spoon over: Spoon over the nachos
Serving Suggestion:
Serve warm with green salad or enjoy as it is.
