Loaded Jacket Potatoes with Taco Mince

Ingredients for Quick Stix Taco Loaded Jacket Potatoes:

  • Quick Stix Mix Taco Mince recipe
  • Medium size potatoes (number depends on the amount of people you are feeding, one potato per person is usually enough)
  • 1 tsp butter per potato
  • 2 tbsp guacamole per potato 
  • 2 tbsp sour cream per potato 
  • 3 cherry tomatoes per potato 
  • Fresh coriander - herbs of your choice for garnish 
  • 4-5 tbsp of Taco Mince per potato 

Cooking Instructions:

  1. Pick : Choose medium-sized, starchy potatoes like Senators. Scru well, but leave the skin on. mix and saute in a pan with oil. Put aside to cool down.
  2. Bake: Pre-heat the oven to 200 C. Pierce your potatoes with a fork and pop them directly on the oven rack. Bake for 50-60 minutes or until soft when pierced with a skewer.
  3. Top up: Cut your baked potato in half and load it with butter, cheese, taco mince, guacamole, sour cream, cherry tomatoes of whatever topping you crave!
