This family favourite Jumbuck Stew made with budget-friendly lamb cuts and sweet pumpkin brings a warming, hearty meal to the table with just a few ingredients.

Ingredients for One Pot Jumbuck Stew:

  • 1 Quick Stix Savoury Mince recipe base (organic seasoning)
  • 1 kg of lamb neck chops, shank meat or forequarter pieces
  • 1 chopped onion
  • large wedge of Kent pumpkin - peel and chopped into large chunks
  • 1 cup tomato passata
  • 1 cup water
  • salt to taste

Cooking Instructions:

  1. Brown the Meat: In a large pot with a lid, heat 2-3 tablespoons of olive oil over medium-high heat. Add the meat and brown on all sides.
  2. Add all ingredients: sprinkle over the recipe base, add the onion, tomato, water and pumpkin
  3. Bring to a boil: Then turn down to a simmer, cover the pot and let it cook for about 2 hours or until the pumpkin is soft and the meat starts to fall off the bone. This can be done in the oven or in a slow cooker if you prefer - adjust cooking time accordingly.
  4. Add salt to taste and give the pot a good stir. This breaks up the pumpkin and thickens and sweetens the gravy

Serve with cous-cous or crusty bread to soak up the delicious juices.
