Crispy Skin Butter Chicken Pieces

This was an experiment in using the Butter Chicken mix as a marinade for some skin-on chicken. It was really tasty and cooked in 20 mins in the airfyer. 

4 chicken Maryland pieces with the skin on, or 8 drumsticks

2 tablespoons olive oil

1/2 pack Quick Stix Butter Chicken

Mix the Butter chicken mix and the oil together in a large bowl.

Add the chicken and toss with tongs to completely coat it. Let marinate for 30 mins.

Place in a single layer in the air fryer and cook for approx 20 mins at 180oC - they are all different so you are cooking it until the skin is crispy and golden brown and the chicken is cooked through (test it but poking a sharp knife into the thickest past of the meaty bit. If the juice runs clear its cooked, if its pink give it another 5 mins cooking.) Or cook in the oven as you would cook a roast chicken.

Serve nice and hot with a chopped salad and a fresh yoghurt dip.
