Apricot Butter Chicken

This dish is a twist on the old family favourite - Apricot Chicken. A few tablespoons of Love My Earth Organic's Butter Chicken Spice Mix creates a delicious meal the whole family can enjoy.

Ingredients

  • 1 kg chicken thighs or breast, cut into bite-sized pieces
  • 3-4 tablespoons Love My Earth Organic Butter Chicken Curry Powder
  • 1 can (400ml) coconut cream or cream
  • 1 cup dried apricots, chopped
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil or ghee
  • 1 cup chicken stock
  • 2 tablespoons tomato paste
  • 1 tablespoon honey (optional, for extra sweetness)
  • Salt and pepper to taste
  • Fresh coriander for garnish

Instructions

  1. Prepare the chicken: Season the chicken pieces with salt, pepper, and 1 tablespoon of the Butter Chicken Curry Powder. Set aside for 10 minutes to marinate.
  2. Sauté the aromatics: Heat oil or ghee in a large pan over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Cook the chicken: Add the marinated chicken to the pan and cook until browned on all sides, about 5-7 minutes.
  4. Add the spices: Stir in the remaining Butter Chicken Curry Powder and tomato paste. Cook for 1-2 minutes to release the aromatic flavours.
  5. Create the sauce: Pour in the coconut cream and chicken stock. Add the chopped apricots and honey (if using). Stir well to combine.
  6. Simmer: Reduce heat to low and let the curry simmer for 20-25 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened. The apricots will soften and add a beautiful sweetness to the dish.
  7. Season and serve: Taste and adjust seasoning with salt and pepper as needed. Garnish with fresh coriander and serve hot with steamed basmati rice or naan bread.

Tips

  • For a richer flavour, use full-fat coconut cream instead of regular cream
  • You can substitute fresh apricots when in season - use about 8-10 fresh apricots, pitted and halved
  • This dish tastes even better the next day as the flavours develop
