Einkorn is one of the most ancient grains and is naturally higher in protein, antioxidants, lutein, zinc, iron, and B vitamins compared to regular white flour. It’s also less modified and naturally lower in gluten, making it a beautiful flour choice for easy homemade baking.
Ingredients for Einkron Bagels:
- 1 3/4 cups organic einkorn flour
- 3/4 cup Greek yogurt (use Coconut Greek yogurt for a dairy-free option)
- 1 1/2 tsp baking powder
- 1/4 tsp bi-carb soda
- 1/2 tsp fine Celtic salt
- 1 tbsp olive oil, optional but helps softness
Optional toppings:
- Egg wash

Cooking Instructions:
- Preheat: oven to 200°C fan bake.
- Mix: Einkorn flour, baking powder, bi-carb soda, and Celtic salt in a bowl.
- Add: Greek yogurt and olive oil.
- Stir: gently until just combined. Einkorn dough should stay slightly soft and sticky.
- Shape: lightly flour your hands and divide the dough into 4 balls.

Form: poke a hole in the middle of each ball and gently stretch into bagel shapes.
- Place: on a lined baking tray.
- Brush: with egg wash if desired, then sprinkle with sesame seeds or everything bagel seasoning.
- Bake: for 18–22 minutes, or until golden.
- Cool: slightly before slicing and serving.
Serving suggestion:
Serve warm with butter, cream cheese, avocado, eggs, smoked salmon, or your favourite savoury toppings. Perfect for breakfast, lunchboxes, or an easy homemade snack.
