Ingredients for Easter Cacao Butter Chocolates:
- 1.5kg lamb chops with bone
- 1 pack organic savoury spice mix
- 1 large garlic clove, minced (optional)
- 4 tbsp fresh mint, finely chopped
- Juice of 1 lemon
- 2/3 cup extra virgin olive oil
- 1/2 cup water
- 2 onions, sliced into rings
Cooking Instructions:
- Preheat: the oven to 180°C (fan-forced) or 200°C (conventional)
- Mix: the spice blend, garlic, mint, lemon juice, olive oil, and water in a bowl until well combined
- Marinate: the lamb chops thoroughly and let them sit for 1 hour
- Layer: onion rings on the base of a baking dish and place the lamb chops on top
- Cover & Bake: with wet baking paper or foil and bake for 40 minutes
- Crisp: remove the cover 10–15 minutes before the end of cooking to allow the chops to brown
- Serve: hot with creamy mash and your favourite greens
