Thai Red Curry with Coconut, Lime & Ginger Chicken Bone Broth Rice

This Creamy Red Curry is a quick, veggie-packed weeknight dinner with a rich coconut sauce and vegetables. Made with broccoli, green beans, capsicum, red curry paste and served over our NEW Love My Earth Organic Coconut, Lime & Ginger Chicken Bone Broth Rice, it's a simple way to put a Thai inspired meal on the table using clean, wholesome ingredients.

Ready in under 30 minutes, this creamy vegetable red curry is perfect for busy weeknights, meal prep or a fuss-free dinner for guests. Serve it over our aromatic bone broth rice for a satisfying, nourishing meal everyone will love.

Ingredients for a creamy, veggie-packed red curry:

  • 1 tbsp extra virgin olive oil
  • 1 onion, sliced
  • 1 bowl of chopped broccoli and green beans (about 3 cups)
  • 1 cup green and red capsicum, sliced
  • 2–3 tbsp red curry paste
  • 400ml coconut milk
  • 1 pack of Coconut, Lime & Ginger Chicken Bone Broth Rice – Organic,plus
  • 1 tsp oil of choice 
  • 500ml water
  • Fresh coriander and lime wedges, to serve

Cooking Instructions:

  1. Sauté: the onion in a pan with olive oil over medium heat for 3–4 minutes until soft and translucent.
  2. Bloom: the red curry paste by adding it to the pan and cooking for 1 minute, stirring, until fragrant.
  3. Pour in: the coconut milk and stir to combine into a smooth, creamy sauce.
  4. Simmer: the broccoli, green beans and capsicum in the sauce for 8–10 minutes until just tender and still vibrant.
  5. Cook the rice: add the contents of the pack to a medium saucepan with 1 teaspoon of oil of choice. Add 500ml (2 cups) water, stir, and bring to the boil. Reduce the heat to low, cover with a lid and simmer for 10 minutes. Serve warm.
  6. Finish: with freshly chopped coriander and a squeeze of lime for a burst of freshness.
