Golden Coconut Curry Quick Stix: Our New Certified Organic, Thai Inspired Curry Base
I've always had a soft spot for Asian flavours. Galangal, kaffir lime, a little kick of chilli. These are some of my very favourite spices, and I've wanted to build a Quick Stix around them for a long time.
So here it is. Golden Coconut Curry.
From the treasure chest
This one has been a while coming. The recipe sat in my treasure chest of recipes for quite some time, and it's taken over a year to bring it from that chest to the pack you can now hold in your hands. Some things just need time, and this was one of them.
What makes it golden
Coconut, kaffir lime and turmeric are the heart of this blend. Organic coconut milk powder gives it a creamy base, kaffir lime brings the fragrance, and turmeric gives it that beautiful golden colour. Galangal, lemongrass, garlic, onion, coriander, white pepper and a gentle touch of chilli round it all out.
Cook it with a tin of coconut cream and everything comes together into something rich, fragrant and so comforting. It's mild, so you can keep it family friendly or add as much extra chilli as you like.
Who it's for
This one is for the lovers of Asian inspired flavour who want a pure, versatile meal, with no fillers, no additives and no refined sugar. It's just certified organic herbs and spices doing what they do best.
How I love to cook it
My favourite is prawns and fish, finished with plenty of fresh lime and coriander. It's light, fresh and on the table in no time.
When I want something cosy, it's slow cooked chicken with extra chilli.
It's just as good with beef, pork or a big pile of veggies. Add a little extra water and serve it with noodles, and you've got a quick laksa.
