Make this delicious Mediterranean inspired dahl in 4 quick steps
- Heat oil in saucepan, add Bombay Tomato dahl mix and fry until fragrant
- Add 1/2 chopped eggplant, 1 chopped zucchini and 1 chopped capsicum
- Add 800 ml of boiling water and 400g tin of chopped tomatoes
- Cook for 30 mins on low-medium heat, stirring occasionally
- Garnish with parsley and yoghurt
Serve with crusty garlic bread and a fresh salad.
