400g tin of organic mixed beans
1 tablespoon of Vindaloo spice mix
½ chopped onion
A handful of fresh herbs
Half a chopped capsicum
1 chopped zucchini
1 tin of tomatoes
1. Fry onion, capsicum, zucchini and herbs in a pan until soft and slightly golden
2. Add Vindaloo mix and fry until fragrant
3. Add a tin of tomatoes and simmer for 5 minutes
4. Serve with tacos, nachos or crusty bread
Tips
You can play around with how spicy you want it by adding fresh chilli or extra curry powder. It's great for breakfast, lunch or dinner!
